Coke and Soy Sauce Chicken

Ingredients:
  1. 1/2 Soy Sauce
  2. 8oz Coke (Use regular Coke because Diet Coke does not have real sugar in it)
  3. About a dozen Chicken Drumsticks
    I poured a 1/2 cup of Soy Sauce & an 8oz bottle of Coca Cola with about a dozen chicken drumsticks in my Bean Pot. Cooked on 375 for 1.2 hours. 
    Chicken should fall off the bone. Remove from bean pot and set aside. Pour juice from bean pot into stock pot and simmer/reduce til the sauce turns into a nice glaze. Then plour over chicken and enjoy. 


Bean Pot Salsa Verde Chicken



Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 (16oz) jar salsa verde (We like to use Herdez or Trader Joes)
  • 1½ c. Monterey jack cheese, shredded (or to taste)
  • ⅓ - ½ c. chopped cilantro (optional)
Instructions
  1. Place chicken breasts evenly over the bottom of the bean pot and cover evenly with salsa verde.
  2. Cook at 375 degrees for about 1 hour.  About 30 minutes before serving, sprinkle cheese evenly over chicken. Remove individual chicken breasts from Bean Pot, sprinkle with cilantro (optional) and serve!

Honey Garlic Chicken

1 1/2 to 2 pounds boneless, skinless chicken thighs (4 or one thigh per family member)
3 garlic cloves, smashed and chopped
1 teaspoon dried basil
1/2 cup  soy sauce (La Choy or Tamari wheat-free are gluten free)
1/2 cup ketchup
1/3 cup honey


The Directions.

Put the chicken into your Bean Pot. In a small bowl, combine the rest of the ingredients, then pour evenly over the top.
Cook on 375 for 1 hour.
Serve with basmati rice and steamed or roasted vegetables.

Loaded Potato & Chicken Casserole - Heart-attack Casserole

 2-3 lbs chicken breast cubed 
8-10 med potatoes 
1/3 cup olive oil 
1&1/2 tsp salt 
1 tbsp black pepper 
1 tbsp paprika 
1 tbsp garlic powder 
6 tbsp hot sauce Topping 
2 cups Mexican cheese 
1-2 cups crumbled bacon
1 cup diced green onions 

Directions: Preheat oven to 425 degrees. In a large mixing bowl mix together oil,salt,pepper, paprika, garlic powder and hot sauce mix well. Add cubed potatoes and coat. Scoop the potatoes into your Celebrating Home casserole dish, leaving behind as much of the mix in the bowl as possible. Bake potatoes for 45-55 min. Cook until crispy and brown. While potatoes cook, cube chicken and put into bowl with season mix and coat. Once potatoes are fully cooked, remove from oven and lower temp to 400 degrees. Top the cooked potatoes with coated chicken. In a separate mixing bowl mix cheese, bacon and diced green onions. Put this topping on top of chicken. Return casserole to oven and cook for additional 20 min or until chicken is cooked through and topping is bubbly delicious. Enjoy!! 

Hard Boiled Eggs

Place eggs in the pot. Cook with lid on at 325° in your oven for about 30 minutes. No need to add water.

Pepper Jack Chicken Dip

The zesty cheese makes this change-of-pace dip a crowd pleaser. Serve with white tortilla chips or French bread cubes. 

One 10¾-ounce  can condensed cream of chicken soup 
One 10-ounce  can chicken breast, drained 
8 ounces  hot pepper jack cheese, shredded 
Salt and freshly ground black pepper 

Put the condensed soup, chicken breast, and cheese in the Bean Pot and stir to combine. Season with salt and pepper to taste and stir the mixture again. Cover and cook on 375 for 1 hour OR microwave 15min.   Stir the dip and serve it immediately, or keep it warm in Bean Pot. 

Italian Chicken

4 chicken breasts
  • 1 packet dry Zesty Italian dressing (Regular is fine but I like zesty better. Sometimes I use a packet and a half.)
  • 1 (8 oz) package cream cheese, softened
  • 1-2 cans cream of chicken soup (depending how cream cheesy you want it)

  1. Place the chicken in a Bean Pot and sprinkle Italian dressing over it. Combine cream cheese and cream of chicken soup in a small pot over low heat and pour over chicken. Cook 375 for 1.5 hours. Once chicken is done you can leave the chicken breasts whole, cube it, or even shred it. I always cut the breasts into tenderloin size strips.
  2. Once you have cut up the chicken, throw it back in the Bean Pot and stir into the sauce. If you feel the sauce is too thick you can thin it to your preferred consistency with a little milk. Serve over pasta or rice.

Doritos Chicken and Cheese Casserole

3 cups cooked chicken, chopped (I used a rotisserie chicken)
1 cup sour cream
1 can cream of chicken soup
1 can of corn, drained
1/4 cup minced onion
2 cups cheddar cheese, shredded
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
1 medium sized bag of nacho cheese Doritos, crushed

Preheat oven to 350 

Spread the bottom of Bean Pot with half of the Doritos . Reserve one cup of cheese. Mix together remaining ingredients in a large bow. Pour chicken mixture over the Doritos. Top with the remaining cheese and Doritos. Bake 30 minutes or until bubbly.

Rotisserie Chicken

Who loves Rotisserie Chicken? If you love tender moist falling off the bone chicken this dish is for you! You will need 1 chicken (this one is about 4lbs), 1 can of low sodium Chicken broth, seasoning, and your bean ...pot. Rinse your completely thawed chicken, remove insides and place in your bean pot, sprinkle the chicken with your favorite seasoning. Pour the chicken broth over the chicken place lid on and microwave for about 30 minutes. Yes I did say microwave. After 30 minutes remove and I use a meat thermometer and check to see that the chicken is at 165 degrees. If not pop it back in for a couple of minutes until temp is 165 degrees. Oh this is so moist and tender. We serve it with some seasoned green beans, a tossed salad qnd a roll. Enjoy! But don't throw that great seasoned broth out. Let it cool and ck back tomorrow on how to use this broth, leftover chicken pieces and some items from the pantry for the best tasting home made chicken soup!

Pie Crust Chicken Pot Pie

First step is to mix together 1 large can of chicken breast (drained) with one can of cream of chicken soup and 1 bag of frozen vegetables. Now you can also use a can of mixed vegetables if you like. I did all the mixing right in the bean pot, which cuts down on dishes used! Next I put the lid on and microwaved for 10 minutes since the veggies were frozen. If you use canned vegetables you can cut the time down to 6 minutes. Turn your oven on to 385 degrees and let it preheat. Next I mix the pie crust up based on pkg. instructions. Roll it out to the shape of your bean pot. Remove bean pot from microwave and remove lid. Place the crust on top of chicken mixture. Before putting into the oven, lightly top crust with melted butter and place in oven for about 15-20 minutes, just long enough to brown the crust. ( do not put the lid on) Remove when its browned to your taste and enjoy.

Gumbo

1 box of gumbo mix
1 box of dirty rice mix
1can of cooked chicken breast drained and broken up
1 lb. chopped smoked sausage and
1 lb of already cooked shrimp (we buy it frozen and just remove tails). 

In your bean pot add 6 ½ cups of water and contents of both boxes. Whisk together till well blended. Next add chicken and smoked sausage. Place lid on and microwave for 15 minutes. Remove and stir again, then put lid on and microwave again for another 15 minutes. Remove and stir in shrimp place lid on and let set for 3 minutes. This is a thicker gumbo, almost like a stew. 
Serve with some fresh made cornbread made while your gumbo is cooking. Important Tip: This makes more than the two of us can eat, so I freeze a portion of it to have when I don’t want to Cook. So before you freeze a portion, remove the shrimp. Shrimp reheated are ok but just not at their best, so scoop those up and enjoy before freezing. You can always throw in some when you reheat.

Black Bean Salsa Bake



1 pound hamburger browned in bean pot or 3 chicken breasts cut into slices
1 can corn drained
1 large can salsa
Mix the three ingredients into the bean pot. Put lid on and microwaved for 15 minutes. Serve with sour cream, chips, and cheese or just plain. This is a wonderful supper

Yummy Supper Surprise

Bown 1 pound hamburger or cook 3 chicken breasts in bean pot.
Take meat out of bean pot and place in bean pot 2 cups instant rice and 2 cups water. Microwave for 5 minutes and leave lid on for 2 more minutes.
Then add one container of philly cream cheese cooking creme (our family likes the garlic one!)
and one bag of frozen veggies. Add the meat back too and stir. Then place lid on bean pot and microwave for 5 more minutes. This is an amazing supper that is good for us and easy to make!

Meditaranian Chicken with Artichoke

--3-4 frozen chicken breast halves
--bag of frozen artichoke hearts
--half jar of green olives (no juice)
--large can of tomatoes (and juice)


The Directions:
Put everything in your Bean Pot and cook on 375 for 1 hour


Chicken Parmesan

Ingredients
 4 boneless, skinless chicken breast halves
1/2 cup bread crumbs (I use gluten free bead crumbs)
1/4 cup shredded parmesan cheese
1/2 teaspoon Italian Seasoning
1/4 teaspoon black pepper
1/4 teaspoon kosher salt
1 tablespoon olive oil
1 beaten egg
sliced mozzarella cheese
1 (26-ounce bottle) favorite jarred marinara sauce

Directions:
--spread the 1 tablespoon of olive oil into the bottom of your Bean Pot
--whip the egg with a fork in a separate bowl
--mix the bread crumbs with the seasonings and the parmesan cheese in another separate dish
--dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings
--place the chicken breast pieces in the bottom of the Bean Pot
--layer 2-3 slices of mozzarella cheese on top
--cover with entire jar of marinara sauce
-- place lid on top, cook on 375 for 1 hour. If your chicken is still frozen, it will take longer.
Serve with your favorite pasta.

Beer Chicken

2 lbs skinless, boneless chicken breasts
1 bottle or can of your favorite beer
1 tsp salt
1 tsp garlic powder
1 tbsp dried oregano
1/2 tsp black pepper

Directions

Place all ingredients in a Celebrating Home Bean Pot.
Cook at 350 degrees for 2-3 hrs.

Bean Pot Citrus Cinnamon Chicken (Gluten Free)

Ingredients
1 cup ketchup
¼ cup instant tapioca
1 cup orange juice
1 stick cinnamon
6 pounds chicken thighs, bone-in, skin removed

Instructions
In a bowl, combine the ketchup, tapioca, and orange juice. Put about half in the bottom of your Bean Pot. Place the cinnamon stick on top of the sauce.
Put a single layer of chicken in the pot, spoon some sauce over each piece, add another layer of chicken and sauce. Repeat if necessary.
Cook at 375 for 1.5 hours or until chicken is done.
Serve with rice and zucchini.

Chicken Salsa Tacos

1 envelope of taco seasoning,  
6 boneless, skinless chicken breasts  
1 jar of salsa  
 
 Place all ingredients into Bean Pot. Stir and cook on 375 for about an 1 hour or until chicken is cooked throughout. Should be able to shred with a fork. Place chicken mixture in tortillas and top  
with your favorite toppings!
