16 oz pasta of your choice
1 can fire roasted spicy tomatoes
1 can corn, drained
1 can black beans, drained and rinsed
1 can chicken broth
chicken - I used rotesserie chicken but use what you have - canned, grilled, fajita, leftovers, etc.
cumin to taste
Mix everything in bean pot except cilantro. Cover and microwave on high for 18 minutes, stirring once or twice during that time. Sprinkle chopped cilantro on top and serve. This is the healthy version; however, feel free to add shredded cheese, sour cream, black olives, avocado - whatever your heart desires!
