Sweet Potato Salad
1 Sweet potato
1 Apple, cubed
1/4 Cup celery, chopped
2 Tbsp. walnuts, chopped
2 Tbsp. raisins
2 Tbsp. miniature marshmallows
2 Tbsp. mayonnaise
2 Tbsp. sour cream
1/2 tsp. lemon juice
Place sweet potato in Bean Pot, cover with plastic wrap and microwave until done.
Remove and cool completely.
Peel potato, cut into cubes and place into Bean Pot.
Add apple, celery, walnuts, raisins and marshmallows.
In bowl combine mayonnaise, sour cream and lemon juice; mix well.
Pour over salad and toss gently.
Cover and refrigerate at least 1 hour.
