BBQ Chicken and Cornbread Casserole


1 lb Chicken cooked and cubed or shredded
1 Sweet Potato peeled and cut in 1 inch chunks
1 Red Onion
1 cup Corn frozen or fresh
1 18 oz. Barbecue Sauce
1/4 cup Water hot
1 pkg. Cornbread mix

Spray inside of Bean Pot with cooking spray.
Place the chicken and potato in the Bean Pot. Add corn
and onions, then empty bottle of barbecue sauce into pot.
Add hot water to bottle shake and add to pot. Mix well.
Prepare cornbread as directed on package minus oil or
butter. Pour cornbread mix over chicken mixture. Cover
and bake at 250 degrees for 6 to 8 hours.
