Summer Salad

2 cucumbers, peeled and thinly sliced
2 cups cherry tomatoes, sliced in half
1/2 cup sweet onion, thinly sliced
1/2 green pepper, thinly sliced
2 tbsp fresh parsley chopped
1 tbsp apple cider vinegar
1 tbsp olive oil
Salt and pepper to taste

In your Bean Pot, mix together cucumbers, tomatoes,onion, parsley, vinegar, olive oil, salt and pepper
Cover and let stand for 10 min before serving Salad can be made ahead and refrigerated.
