Perfect Pinto Beans

PINTO BEANS

Wash and look over pinto beans. Put beans in bean pot and cover with water. Put in microwave for 30-40 minutes with lid off. Pour off water and add fresh water with seasoning. Put bean pot in
oven at 350 degrees and cook for 2-3 hours or longer.

Chicken Fajitas for 2

You need 1 lb. of chicken tenders; almost thawed (this makes it easier to 
slice). 
1 package of Fajita seasoning mix, 
chopped onion, chopped red and green bell peppers. 
Spray mini bean pots with Pam spray. mix chicken, seasoning mix, and sliced vegetables together. Cover and place in 
microwave and cook for 10 minutes. Check to see that chicken is done if not heat for 2 more minutes. Remove from microwave & serve with warmed tortillas, chips, guacamole, sour cream 
and cheese! 

Apple cinnamon bake in Mini Bean Pots

 3 TBSP flour,
1/2 TSP innamon
1 heaping TBSP Baking Soda, 
1/8 TSP Baking Powder
TBSP Applesauce
1/2 TBSP Vegetable Oil
1/2 TBSP Milk.  
Mix all together. Microwave for 45 seconds with lid off.  
Icing - 1 TBSP soft cream cheese, 2 TBSP Powder Sugar and 1/2 TSP Milk – mix and drizzle over top

Chicken Pot Pie in Mini Bean Pots

1 can of the chicken breast 
1 can of cream of potato soup 
about 1/2 cup water 
1/2 cup vegetables  
Mix together and divide between 2 mini bean pots 
Flatten out 1 biscuits each and put on top Bake 350 for 20-30 min

Salsa Chicken in Mini Bean Pots

Salsa chicken a favorite recipe for the bean pot...so for 1 serving, the mini bean pot works great  
•2 boneless chicken tenderloins, thawed.  
•1/4 c instant brown rice 
•1/4 c water 
•1/2 c salsa  
•shredded Mexican blend cheese  
ut up chicken in bite size pieces and cook in 2-3 teaspoon extra virgin olive oil until no longer pink. Pour rice and water together in dish. Put chicken on top of rice, and salsa on top of chicken. Microwave 5-6 min or until rice is soft. 
Top with desired amount of cheese and 
microwave 30 seconds longer. SO GOOD!!

Turkey Thai Recipe

1/2 C hot water
1/4 C raw sugar
2 T rice vinegar
2 T low sodium soy sauce
1 T chili garlic sauce
1 lime, juiced
2 C leftover turkey, cubed
2 C broccoli slaw, packed
1 C bok choy, chopped and packed
1 C napa cabbage, chopped and packed
1/2 C cilantro packed
1/2 med. onion, sliced
3 garlic cloves, minced
3 scallions, chopped
8 oz. whole wheat organic linguine

Directions:

  • Combine water, sugar, vinegar, garlic sauce and lime juice in a bean pot and stir to dissolve sugar
  • Stir turkey in to sauce to cover
  • Add broccoli slaw, bok choy, cabbage, cilantro, onion, garlic and scallions and stir to mix
  • Cook on 350 for 1 hour. 
  • Make linguini as per package directions just before serving
  • Toss with bean pot mixture
  • Serve and Enjoy

Coke and Soy Sauce Chicken

Ingredients:
  1. 1/2 Soy Sauce
  2. 8oz Coke (Use regular Coke because Diet Coke does not have real sugar in it)
  3. About a dozen Chicken Drumsticks
    I poured a 1/2 cup of Soy Sauce & an 8oz bottle of Coca Cola with about a dozen chicken drumsticks in my Bean Pot. Cooked on 375 for 1.2 hours. 
    Chicken should fall off the bone. Remove from bean pot and set aside. Pour juice from bean pot into stock pot and simmer/reduce til the sauce turns into a nice glaze. Then plour over chicken and enjoy. 


Bean Pot Salsa Verde Chicken



Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 (16oz) jar salsa verde (We like to use Herdez or Trader Joes)
  • 1½ c. Monterey jack cheese, shredded (or to taste)
  • ⅓ - ½ c. chopped cilantro (optional)
Instructions
  1. Place chicken breasts evenly over the bottom of the bean pot and cover evenly with salsa verde.
  2. Cook at 375 degrees for about 1 hour.  About 30 minutes before serving, sprinkle cheese evenly over chicken. Remove individual chicken breasts from Bean Pot, sprinkle with cilantro (optional) and serve!

Taco Dip

1 block 8 oz cream cheese (cubed)
1 pound Velveeta cheese (cubed)
2 cups of salsa.with or without beans added optional.
envelope taco seasoning mix

Please all items in your Bean Pot. Microwave at intervals of three minutes stirring in between until all cheese has melted and is hot to serve.
